CPU AMD Ryzen 9 3900XT
GPU AMD Radeon (TM) R9 390 Series
MB MSI MPG X570 GAMING PRO CARBON WIFI

what is the best software to get CPU/GPU temp in and out of games and what values are best to watch?

AMD Ryzen Master. Can't beat the original CPU manufacturer's software.

You don't have to overclock. It can be used as monitoring software.

HWINFO64 works great as well.
