Best way to backup data files before new install Win 8 to Win 7

I want to remove Windows 8 and return to Windows 7 or even XP. What is the best way to remove files that I want before formatting? This is not a dual boot system. I understand that programs like MS Office, Quicken and others will have to be re-installed. This I am prepared to do I just want a sure and faster way to save pictures, music and data files.

Almost all of your data is stored in your user account. Docs, music, videos, favorites, desktop, etc... Copy it to an external storage device and you are done.

Thank you for the advise, copy it is. Is there anything else or anywhere else I might look for data that I should keep? Damn I wish I would have installed using dual boot.
