Have Linksys EA7200 wireless/wired router. Tv's wireless boards just died.
In order to direct connect, I'm trying to decide best way to route cat 5 or higher to the devices.
If I pull monoprice flexboot cables, there will be excess laying around somewhere. One pull is about 30' from the router(up one wall, down another and across the attic. The other cable will be about 50' length and only about 45' or so cable needed.

While wall plates make a cleaner installation, is it worthwhile to put more pieces in the mix?

Also should I use Cat 7 or 8 as the primary use will likely be Smart Tv....

No "Cat7" or "Cat8" won't benefit you and are probably fake anyway.
If you don't want excess cable, you could learn to terminate cat5...

If you don't want excess cable, you could learn to terminate cat5 cables. That would be my recommendation. You could buy bulk wire or the Monoprice cables. Then cut one end of the Monoprice to make it easire to pull. Put the home terminated end behind the TV. If you choose to terminate cable, you need a basic cable tester, I recommend this -- https://www.amazon.com/Klein-VDV526-052-Scout-Junior-Tester/dp/B004CI9NRM It will allow you to test your cables.
