Tom's Hardware tested it on 11 different games, at 1080p & 1440p resolutions, with the following results for the 6GB GTX 1060 vs. the 8GB RX 580:
■ The GTX 1060 beat the RX 580 in 3 of the games (Civilization VI, GTA V, & Ghost Recon Wildlands), but at best it was only a 10% margin; in GTA V both were above 100FPS, but in GTA V & Ghost Recon even the 1060 barely made it over 60FPS.
■ They tied in 2 of the games (Metro: Last Light & Ashes of the Singularity).
■ The RX 580 beat the GTX 1060 in the other 6 games (Battlefield 1, Doom, Hitman, Rise of the Tomb Raider, Tom Clancy's The Division, & The Witcher 3). Biggest margins were with The Division (13%), BF1 (15% margin), Doom (17%), with Rise of the Tomb Raider having the smallest margin (2%); the other 2 were about a 5% margin.
Based on that record, the conservative judgement would be that the RX 580 ties with the GTX 1060. The mainstream judgement would be that the RX 580 has a small edge in performance over the GTX 1060, but that in most games the margin either way is such that you're probably not going to notice it, so it comes down more to cost & how much VRAM you want. Personally, I'd lean a bit more towards the "win" column for the RX 580, but that could just be bias...
I tend to agree with you there spdragoo. It seems when people say that the 1060 beats the 580 in most titles, I think they're actually referring to the 480; which is based on the same silicon. After the higher clocking and tweaks AMD did on the 580, it is able to beat the 1060 more often than not. Either way, all 3 cards perform very close to one another.
Now when it comes to overclocking, that becomes a completely different story since the 10xx line of Nvidia cards are known to overclock better than the AMD 4xx/5xx lines of cards.
+1 with Spdragoo, the RX 580 8GB is actually the better performer. Just less efficient. Not sure why everyone jumped straight to the 1060 6GB (i'm gonna say because the Nvidia logo). Only issues might be the Power Supply being able to handle it, Corsair CXM 450 might be pushing it. What's the rest of the specs you're working with?

I honestly thought the 1060 6GB was faster, I looked at the launch reviews and they only put it a bit above the RX 480 in terms of performance...
