Question BIOS not allowing max Xeon X5680 multiplier

Tweaking an old school X58 system, but hopeful someone has knowledge!

I have a Gigabyte GA-EX58-DS4 motherboard with F11 BIOS. I recently swapped out the original Core i7 920 with a Xeon X5680. Admittedly this was never published as a supported processor, but everything is working nicely.

The only issue I'm having is the BIOS will only let me choose a CPU multiplier up to 26. I'm leaving it on auto, but this restriction seems to mean that it won't reach the max turbo boost speed of 3.6GHz. Looking at CPU-Z and Core Temp while running some CPU intensive benchmarks I'm getting 100% load on all cores but I'm only hitting around 3.5GHz at a multiplier of 26 even though CPU-Z reports the multiplier range as 12-27. Does it seem likely this is an issue with motherboard/BIOS support? There are a couple of newer BIOSes but they're both beta so unsure about upgrading. I've also never done any overclocking, but is it worth thinking about overclocking the BCLK?
