I have a Asrock B550 PG Velocita mobo with Ryzen 5 5600X CPU.

It currently has BIOS v1.2 installed.

Can I update to the latest BIOS version (v2.10)?

I'm not sure what the Description comments mean.
Also in the CPU support list it says the "Validated BIOS" it has P1.20 for the 5600X

I'm trying to solve a problem with the PC randomly restarting during specific games e.g. Apex legends

If you're on 1.2 and the latest is 2.1, gradually work your way to the latest as opposed to jumping to the latest version, i.e, 1.5>1.8>1.9>2.0>2.1. Once on the latest BIOS version, see if you have chipset drivers pending update. As for your problem with your system rebooting, could you mention the make and model of your PSU and it's age? On a side note, include the specs to your build like so:
CPU:
Motherboard:
Ram:
SSD/HDD:
GPU:
PSU:
Chassis:
OS:

Why would you go step by step? that’s crazy. Each bios update is a full refresh of the entire firmware. Updating from 1.2 to 2.1 will be exactly the same as stepping through them one by one.
