The pins are usually found on the separate camera adapters of tripods
that use them, and of course they are meant to keep the camera from
rotating. They are a fairly new thing (well, I don't remember seeing
them in 1950 or so, at least :).

The tripod will work fine, but you have to make sure the tripod screw
is tight enough to prevent the camera from rotating, but not tight
enough to pull the tripod socket out of the camera. ;)

The rubber insert on the head will help.

It would be worse if you had the pins on the tripod and no hole in the
camcorder baseplate. In fact many still cameras (maybe all?) don't have
these holes. I think I remember once unscrewing a pin from a camera
baseplate for that reason (it was made to be removable, of course).

You should get the 501. It has the video pin. Bear in mind that the screw
isn't fixed in place but slides all over the place in the slot. I wouldn't
feel comfortable without that pin. It's okay for still photography with
light lens but not when you have to swing/pan the heavier camcordor
constantly.
