I have a hd4850 and a e5200, if I overclocked the e5200 to around 3.6 ghz could I add another hd4850 for crossfire without any bottleneck? I play at 1280x1024.
 
A single 4850 is plenty of card for 1280x1024.
Crossfire won't do much for you until you start cranking the resolution up.
It will allow you at that res to turn up AA and AF, so it will look a little "prettier", but it's not a huge effect, not nearly as good as being able to run a bigger monitor at higher res.

To answer you question, if you added another 4850, your e5200 becomes the bottleneck. If you then replaced that CPU with an e8500 or e8600, your resolution becomes the bottleneck. Looks likes if you're going to upgrade, it would be logical to start with a 23" or 24" monitor and see what framerates you get first. You might be happy with the results and might not need anything else...

i personally upgraded from a 19" monitor to a 24" one with my current rig (x2 6000 + HD4850) and didn't find it necessary to upgrade anything...
