Regarding desktop CPUs, a month ago I received notice on availability of the AMD 5950X from B&H Photo (for $830) and had no trouble securing one within 5 days.
Among other uses, I needed it to complete benchmarks and statistical analysis for a research paper I am working on... it is a phenomenal processor.

The 5800x and 5950x have been in stock pretty decently at my local Microcenter at 379.99 and 799.99 respectively for weeks now. The only chips that seems to cycle in and out of availability are the 5900x and 5600x. The 5600x has been more plentiful and even dropped to 279.99 recently. So at least those are starting to drop in price with more availability.

I'm writing this on a 5800X right now. It's a noticable bump up from the Core i5-6500 I had before.
