Me and my neighbour are sharing the internet, I have my own router (Air time capsule) which is connected to his (Cisco from the ISP) by a cat6
How I can have my own network in logical sense, I mean I don't want my devices to be accessible by his devices (Shared folders and so) without creating a domain and server!
can I do that by creating different subnet?

If your router won't do that it is a POS, a $40 TP-Link works fine for such an arrangement. You might want to actually test your cable with a cable tester, well worth the money.

Simply connect the CAT6 cable coming from an LAN port of his router to the WAN port of your router, set your WAN IP and DNS addresses to his router gateway address and use a different subnet from him for your network (so if he is 192.168.x.1, use that as your WAN and DNS addresses and make your LAN 192.168.y.1).
