Since you already have a HDD for storage, I included a SSD for fast boot and loading times.
FX-8320 can easily overclock to AMD's top of the line 8350.
CM Hyper 212 EVO is a great performing cpu cooler at a small price. It overclocks well.
Great motherboard for overclocking.
7870 XT is a little weaker than a 7950, but it's extremely cheap. There's a MIR that reduces the price by $30, making it $140. It's $100 cheaper than a 7950 and just a little weaker.
Great quality case on sale. It provides superb airflow and cable management. At $70, this is the best case in it's price range.
Great psu. Semi-modular and has enough watts for this set-up and overclocking. If you want to crossfire in the future, then grab this PSU: http://pcpartpicker.com/part/xfx-power-supply-p1750bbefx

Should I go with these 2gb video cards or a 3gb one, I'm planning on waiting until black friday/ cyber monday so I can get a bunch of stuff on sale. Do you think these AMD processors will be discounted?

You've got a pretty good chance on discounted AMD CPUs, and Intel, for that matter. 2GB is enough for single 1080p, and manageable for higher resolution.
