Budget server build

Hi I have a server/ workstation for file storage and a Minecraft server running on it but its so old now I have upgraded the hard drives and stuff so they are good for a new build, I also want the new build to be able to encode of render videos well

The specs are
Amd athlon 3800
2x 2tb WD sata 3 drives
I don't know what mobo as I pulled it out of an old system
8gb ddr2
Some nzxt fans from s340 and 2 silent wings 2 fans
500w evga PSU

I don't want to spend lots on the new build and I don't mind much about CPU choice as long as it can run a few game servers and edit video. I was thinking i3 or i5 because I don't know how the xeon numbers work.

Perhaps a FX, 8GB of DDR3 and a small SSD. FX chips are good for Minecraft servers, plow through video encoding, and can do some files on the side. The comparable Intel chips are more expensive but if within your budget would be somewhat better in terms of performance and use less power.

Solution
I think for your budget buying used systems like the dell precision t3500 and upgrading them is your best shot and performance per dollar. You should be able to find them with 6 core xeons for around 300£
