Only some CPUs are compatible with dual (or greater) socket builds. Generally the Xeon Scalable is the choice because the lowest end CPU to the highest end CPU use the same socket.
When you start talking about Xeon CPUs then you have different RAM (registered ECC), different coolers, etc. It is quite different than a desktop build.

But you are talking $$$$$ for any of those motherboards, CPUs and RAM.

Then I would probably be looking at a threadripper based system instead. Hopefully Zen 3 based TR will be available soon.
