Build guidance - Xeon?

Hello,

I have always done my own builds. Looking for some validation to my current build as I don't have as much time to spend on research. Currently running I7-860 on ASUS P7P55D-E Pro with GeForce GTX 550 Ti.

Primarily use for Photoshop and gaming. Not overclocking. Speed, stability and energy efficiency are my priorities in that order.

I am leaning towards going with a Xeon E3-1240 V5 since I will have a separate GPU and don't need integrated.

Does this sound like a good approach? I would appreciate any motherboard, graphics card and memory guidance/input. I have always gone with ASUS MB but am open to other suggestions.

The 2130 is hyper threaded. Go check Intel ark website to make sure.
What budget? I kept this under $1,000. Do you already have the gpu? If so deduct $129.99 from 892.91...to get $762.92. You could throw in an air cpu cooler like a Cryorig for under $35, but it isn't really necessary if you are not overclocking.
