Hello everyone!
I plan on building a pc right around june, my budget is 1,500-2,000. I currently have a corsair 760t (white) case for about a couple years now and haven't built a pc because I got really busy with school/work. I was wondering if I should just keep the case and build onto that or get a new case...
Anyways; for the built I plan on doing small video/photo editing hopefully streaming soon and just run any new up coming game!
I'll need a software for it as well and hopefully it'll be playable for a VR... Not sure what other information I should add. Maybe what monitor I should buy and a headset. I'm buying a hyper x cloud microphone and would like a good head set with it and if you would like to recommend a good webcam
It be cool if it was color coordinated too. I currently have all rbg lights for my mouse/keyboard and my desk will be grey. Not sure if I should over clock my system, really don't know much about it. I'm very outdated on the tech world. I also want to be able to hook up 3 monitors for the future...

Don't know much about headphones, webcam etc so maybe someone else can help with that. Monitor knowledge is also limited, so don't take my word on that as well, but the base system is something I can vouch for. You can play 1440p 60 Hz or 1080p 144 Hz with this system, now it's up to you which one you want. It will handle VR as well, and definitely good enough for any level of video editing, and streaming capable as well, since that CPU is a 12 core beast. You could get a faster GPU since you have the budget for it, but since you don't have your mind made up on a monitor, I just went with whatever felt good. You can squeeze in better GPU and higher res monitor, or 1440p 144 Hz as well. It's up to you.

Well, there's a lot of options - the 2070 is superseded by, in order, the 2070 SUPER, the 2080, the 2080 SUPER, and finally the 2080 Ti. Whatever you can fit into your budget, will work with the rest of the system, but you should probably get a beefier power supply after the 2070 SUPER, like a RM750x, 650 W gets a little borderline over the 2070 SUPER.

With your budget, you can go as high as the 2080 SUPER, I think. The 2080 Ti is really not worth its MSRP of $1200, so 2080 SUPER is the highest I would go anyway.

Enough cores for your "small video/photo editing hopefully streaming " and faster cores for gaming since you are "Not sure if I should over clock my system".
Motherboard with good VRM and power cycles for better thermals, wifi is added extra. The cooler should keep the thermals in check in the long run.
Enough RAM for longevity and the rest as usual...
