I want to use my old parts from my old gaming PC and turn it into a minecraft server/NAS. The biggest problem I see is the processor being so beefy and power hungry. Is there any way I can Undervolt/underclock and make it so its not making the power bill skyrocket?

Well with my AMD it goes as low as 1.54 for power saving mode, so that's as low as you could lock it and IIRC, with AMD you can disable cores in pairs, so you could disable it down to a 2, 4 or 6 core. But that's what power management is for. IF it's just sitting there serving out the Mr. Plow episodes of the simspons now and again, it's only going to use a few % of 1 core at the lowest speed. It only uses what it needs.
