[SOLVED] Building a new PC: Ned Help Picking parts

I am looking at building a new gaming PC, and I have been completely out of the tech loop for almost 2 years now so I know very little about what's new. I had 2 kids over the last 3 years, so when we had the second one my time for gaming and researching stuff plummeted because I spent that time working and with the kids. But now the kids will be at pre-school soon and I will have a little more time with my life!

That being said the extent of my use will be WoW and some steam gaming (Frostpunk, etc.) I have a 1000 MB connection, and my current PC loads WoW a lot slower than it used to. I'm on a Nvidia Geforce GTX 1060 6GB with an i5-6500 CPU with 16GB of RAM.

I'm not looking for top notch gaming but I definitely want quicker load times in wow. The computer I have now will be handed down to my wife who will be using it for Minecraft with our two oldest children when we do family Minecraft nights.

I'm looking to keep it around $1200, no more than $1500 with a Monitor. I'll more than likely move my Corsair RGB keyboard over to the gaming PC that I build for myself and give the cheaper option to my wife who is not an avid gamer and only will do it for family purposes. She will keep the Monitor.

What I need:
Gaming Rig (internals all)
Gaming Mouse (With Side Buttons)
Monitor

Any assistance/builds are great. Wouldn't mind wireless, but I don't know if wireless has caught up to Cat5.

No, wireless has not caught up to Cat5.
Run a CAT5/CAT6 cable from router to PC.

Is this upgrade-able to 32GB if needed, or is this something that likely wouldn't be needed in the next year or two of gaming assuming my gaming plans don't change beyond what I am beginning to do.

It could be upgraded to: Intel 64GB RAM / AMD 128GB RAM (Windows Home max supported)
For gaming, above 16 GB would likely be a waste of money, spent on more powerful GPU.
