Solution
I read that most games can't use more than four cores and the ryzen 5 1600 has six cores. Most benchmarks and tests say that it performs worse than the i7 7700k so is there a reason that the ryzen would still be better?

 
Games do use more than 4 cores, some handle it better than others. The benefits of The 1600 is you get near similar performance and a better graphics card so if will definitely perform better than the current setup you created.
