Building an i7 8700 + RTX 2060 system

Hey guys. I'm looking for a check of compatibility issues and suggestions if I picked some wrong parts.

I need the build for 3d work with programs like Blender. Not planning to overclock or upgrade. No gaming. I want a stable system with good longevity. Also should work well for VR (Oculus Rift), mainly for VR sculpting (Oculus Medium).

I picked the i7 8700 and RTX 2060 based their good Performance-per-USD, as shown in these tests:

Of the RTX 2060 I picked the Zotac Twin because apparently in its priceclass it has better cooling, as shown here: https://youtu.be/I-DXzX8CAUI?t=456

MSI B360 Gaming Plus I picked for its VRM heatsinks and USB-C. It doesn't allow CPU overclock, but the i7 non-K can't anyway.

For the PSU, Nvidia suggests 500w, which I've gathered is not enough. Cooler Master suggests 650w for a system like that.

SSD is just 240gb. I know it's not a lot. Alternative would be to get a 500gb. But then I'd have to make 2 partitions. And a 400gb partition is in no-man's land. I figured to just get the 240gb now and as prices tumble get a 1TB SSD later on. And for now combine the 240gb with my old 1TB HDD.

I'll use my old monitor, which has VGA, DVI and a HDMI connections. In order to save the GPU's HDMI port for the future VR I would use a DisplayPort-to-HDMI cable to connect the monitor. Should I expect any problems with that setup?
