Hey, I am building my first PC. I have swapped parts and stuff in old ones, so I'm not a total rookie, but I was just looking for recommendations for my parts before I buy them on black Friday or cyber Monday or whatever.

I know it is very overkill, but I have lots of money to spend on it, and want the best with nothing ever running slow on it. Multiple monitors, and I plan on using it as a server as well. I maxed a lot of stuff out for which I plan on future upgrades, just to be sure my PSU will still be able to power everything. Also I live in Canada, so all my pricing and shipping is CDN$.
Here is a breakdown of my thoughts and why I decided on these parts:
Intel Core i7-4930K 3.4GHz 6-Core Processor
-Next Gen Ivy Bridge-E CPU at decent price (next step up is double the price at $1000!)
Corsair H100i 77.0 CFM Liquid CPU Cooler
-Seems like a popular choice with good reviews, easy install in my case, water-cooled, no maintenance.
Asus Rampage IV Extreme EATX LGA2011 Motherboard
-Seems like the best MoBo out there right now with lots of features.
G.Skill Ripjaws Z Series 64GB (8 x 8GB) DDR3-1866 Memory
-This I am not so sure of. I was only planning to get 16-32GB for now, and upgrade more later. But later found out that if you want 64GB, to buy them in a package and not 1DIMM at a time.
-700$ seems like too much to spend on memory, so I might get 16 or 32GB for now.
-I have heard good things from G Skills Ripjaw Z series though. Especially working well with my MoBo.
-Also, after the Hynix fire, I might just get 16GB for now, and hopefully in 6 months prices will go down a bit, and than I can max out my RAM. Or at least go up to 32GB.
Samsung 840 Pro Series 512GB 2.5" Solid State Disk
-Seems like the best SSD out there right now from reviews.
4XSeagate Constellation ES.3 4TB 3.5" 7200RPM Internal Hard Drive
-These I just picked for my server. (I already have 8TB of stuff to share)
-Not necessarily will be going with these really expensive ones. I just picked 4 good 4TB drives to know the total watts for my system.
-I generally want a good 4TB drive to store random music and documents + 2-3 extra 4TB for constantly running a server shared through my house with roomates. Any advice here would be appreciated.
EVGA GeForce GTX 780 Ti 3GB Video Card
-Probably will just start with 1 video card, and upgrade to a second in a year or so.
-I did a bit of research, and most people seem to say this is the best video card to go with right now for 3GB. But for only 300$ more I could get the Titan at 6GB.
-Any advice here would also be appreciated.
Cooler Master HAF X ATX Full Tower Case
-I've wanted this case for like 2 years, now it seems a little out of date since it has been released for a while now. But it's big, looks easy to work inside with, and I like the look of it.
-This is the one item I have already purchased because it was on sale at a local shop.
SeaSonic X Series 1250W 80+ Gold Certified Fully-Modular ATX Power Supply
-I am flip-flopping a lot on my PSU. I was going to go big with a 1500W. But 1250W should be more than enough I think, even with future upgrades.
-Right now I think I am even leaning towards the "Corsair AX1200i". It is on sale for 300$ CDN. The Corsair AX 1200i also is Platinum rated and has very good reviews.
LG BH16NS40 Blu-Ray/DVD/CD Writer
-Just a Blu-Ray drive.

I also have a question about properly using a grounding strap.
A lot of videos say to connect them to a screw that is not screwed in all the way on the PSU, and to have the PSU plugged into the wall, but obviously not to have it turned on. But than a lot of manuals or other videos say not to touch anything in the computer before making sure the PSU is unplugged. What should I do???
One last question that will be very opinionated: Windows 7 or 8.1?
I know this brings up a whole different subject, but I am used to windows XP, and currently even have it set to look like Windows 95 (it's just what I'm used to). I use windows explorer a lot to organize my files and such. I also am fairly used to windows 7 right now, because that's what most the other computers I use have.
But I have heard a few bad things about windows 8 being bad to use with the icon stuff, and that it's better for tablets. On the other hand though, it is newer, and will be supported for longer. Maybe some better features... I wonder if a computer shop will let me mess around with windows 8.1 before I buy it, since I've never used it before.
