This is my current setup:
Amd R9 270x 2gb
8gb ram ddr3
Amd A10 7700k
Nox Urano VX 750W
CoolerMaster Hyper 212 evo
Gigabyte F2A88X-D3H
Samsung SSD 850 EVO

Even though I can play pretty much everything I want in low or medium/high (depends on the game obviously), I saved some money and wanted to make a big upgrade that can last many years.

With the new nvidia 1070/1080 and the upcoming amd cards, I was planning on buying one of them, I'll decide which one when they arrive. But because I have some money now, I wanted to buy a new motherboard with cpu and 16gb of ram ddr4, and then wait for the gpus to come and settle a little bit in price.

The cpu I have in mind is the i5 6600k but don't know if would be a better choice the i7 6700 or 6700k (I hope you guys can help me in this question too).

I only have money now for the mobo,cpu and ram. Should I wait for the gpus and buy it all at once or buy this for the moment and then buy the gpus when they come and I saved enough money again?

For a gaming pc the I7 costs more but won't really show any difference with the I5, so it would be better to go with the I5. And when to buy what, i'd buy the cpu, mobo and ram now, but that's me..

That's what I've read about the i5 vs i7. Even though I use sometimes photo and video editing software, I don't think I'll notice the improvement very much.

And yeah, I really want to buy the cpu and ram now, and for the gpu I'm waiting for the 490 and then I'll decide between that and 1070 depending on the price/performance. I think the 1080 is just too expensive for me.

In terms of compatibility with the mobo and performance with this cpu/gpu I think I'm good right? I don't want to buy this for it to not work well later.

If you will do 4K and/or VR the 1080 will be better but if you're not going to do any of those things than 1070 is good enough, both very good GPUs anyway.
The I5 6600K won't bottleneck the GPU. As for the mobo, have you decided which one yet? Personally I like the MSI Z170A GAMING M7 alot but it's kinda expensive.

I7 will give you better rendering and encoding time in premiere. If you don't need these, get the i5.
You will get big boost in performance from cpu.

Also change your power supply to a good one if you can. You should be able to do that as you have money for an i7. Go with i5 and put the money in a decent power supply.

I have two 1080 monitors right now but want to go 1440 in the future, not interested in 4k nor VR really.
I looked a bunch of mobos and think I'm going to go with the ASUS Z170 Pro Gaming as it accommodates better into my budget and I heard good thing about it, but thank for the advice :]
I don't really care (or know) much about the mobo aside from the compatibility and the ports that I need, if you know about a better one on the same range of price I'll appreciate it.

For the money EVGA G2 is the best right now. Comes with 7 years of warranty. A 550w can easily run your system - https://pcpartpicker.com/product/qYTrxr/evga-power-supply-220g20550y1 .
If you want to spend more, get the EVGA P2 650w (smallest unit in P2 series). Comes with 10 years of warranty. A little overkill, but you will have a nice headroom. I live in Spain and can't find any good prices, is there a problem if a use my psu for the build and change it in the future?
With the i7 i could afford it just barely (and thinking it now I could use better that money), but the psu (with the price I found, that is around 100€/ 170€ on amazon) plus the i5 and the ram is just too much if isn't vital for the build.

I have amazon prime so amazon.es it's great, I'm getting the ram there because it's cheaper. The mobo and cpu are from PcComponentes because the give me the new doom with the mobo and the cpu would arrive earlier, the price is the same in amazon.

PcComponentes have a lot of psu but I don't which one are good, depending on the price I'll consider it, I can't go beyond 50€ right now.

Power supplier are way overpriced on Amazon.es.

Get one of these -
1. EVGA G2 750W - Link PcComponents Overkill and pricey, but best you can get with money. I could not find the 550w one. If you find that, get that. Comes with 7 years of warranty.
2. XFX TS 550W Gold - Link Amazon very good power supply. 5 years of warranty. Made by seasonic.
3. Seasonic M12II EVO 620W - Link PcComponents also very good.
4. Seasonic S12II 620W - Link PcComponents Budget king. Get this if others are out of budget.

I have the intel hardware for it and my cooler says it's compatible with intel sockets LGA 2011/1366/1156/1555/1550/775 but I read that 1551 is the same as 1550 only with different pins, so I think I'm covered there right?

The seasonic S12II 620W is definitely the one. I think with that you guys solved any doubts I had (except for the socket and the cooler, if you can confirm me that).
