cpu cooler: Corsair h115i rgb platinum
memory: g skill ripjaws v 16gb
storage: crucial mx500 1tb ssd
graphics card: asus GeForce rtx 2070 super 8gb strix gaming
case: phanteks eclipse p600s
power supply: Corsair rmx 750w

whats everybodys thoughts?

It's a fine gaming pc, I have one :)

I have a 3800x but really wouldn't suggest it over the 3700x unless the price difference is small.

I run an x570 Asus TUF, 3800x, 3200 MHz memory and 2070S. And it's very smooth at 1440p.

I went for the 3800x as I got it for the same price as the 3700x. Didn’t get that ram in the end went for crucial ballistix 3600mhz. And ended up with the 850w power supply as the 750 was out of stock. Just waiting for the components to turn up, should fingers crossed all be here by the 1st
 
I picked up the 3800x in a Micro Center deal, it's a good cpu just typically not worth the price premium over the 3700x. Your cooling should keep the temps nice and low so it shouldn't ever thermally throttle. The stock Wraith is ok but really load under load.

I don't know what you currently have but my Ryzen pc is extremely snappy and very quick. I'm 52 and have been a gamer forever. You're gonna love it.
