Triple monitors has sort of fallen out of favor and is no longer tested by many hardware review sites. Since the introduction of the Acer Predator, 144 Hz, 1440p, G-Sync w/ ULMB monitors seem to be the most desired gaming resolution. On the AMD side, you have Freesync but FS doesn't include any ULMB technology, some manufacturers provide some motion blur reduction, some don't.

As to which card.... the question of most relevance will be if you overclock your cards w/ MSI Afterburner or an equivalent. The AMD cards are aggressively clocked int he box and "out of the box" have a performance advantage but very small OC headroom. With both overclocked, the 970 has the lead up to 1440p resolution.

That shows you that, Witcher 3 gets 39 fps outta the box at 1440p / 42 on the 390x ... with both overclocked that goes to about 46 on the 970 and 45 on the 390x

At 4k we're looking at 22 and 25 fps outta the box .... 26 and 27 overclocked.

At 5760 x 1080, you are looking at performance at about half way between 1440p and 2160p ... 36 fps on the 970 and 35 on the 390x in W3. SLI will get you over 60 fps at recommended settings.

Number of monitors has no impact om PSi size, you'll need a good 750 watter for twin 970s, 850 watter for two 390x

What are you saying? Only 2fps difference between gtx 970 and R9 390(X version), If that is the case I think it is true only for Witcher 3. The R9 390X has the performance of a gtx 980 and sometimes even exceeds it (depending on the game, it could be faster or a bit slower). For a triple monitor solution (I myself, like a single monitor) The R9 390X is the better choice, but I wouldn't do single card for that., or gtx 970 sli. You could go with a single gtx 980 ti if you don't want to have issues with SLI or Xfire (especially on new titles, which (some) don't have sli/xfire profiles at launch). So, I would go with a good quality 1440p 144hz g-sync or freesync monitor (depending on the chosen gpu) instead of triple monitors.
