Yes a 1070 would be a better since you might utilize the bigger memory buffer for rendering in the future. Also for a simple desktop procedures (not gaming) the 980ti should be able to power them.
Depends on what you want to do with those monitors. The 980 Ti can drive such a resolution, but it cannot run modern triple-A games at playable framerates with it.

I would be using it for video and photo editing. Would a GTX 1070 be a better choice?
