Can A GTX 980ti run 2 ultrawides (3440x1440)

I was wondering if my GTX 980ti is capable of running two 3440x1440 ultrawide monitors to have a total resolution of 6880x1440.

Depends on what you want to do with those monitors. The 980 Ti can drive such a resolution, but it cannot run modern triple-A games at playable framerates with it.

No, You need at least 3 identical monitors to use Nvidia Surround. at least asfaik.

I would be using it for video and photo editing. Would a GTX 1070 be a better choice?

Yes a 1070 would be a better since you might utilize the bigger memory buffer for rendering in the future. Also for a simple desktop procedures (not gaming) the 980ti should be able to power them.

For photo and video editing a 980 Ti works fine. If you were to upgrade I'd recommend a GTX 1080 as the 1070 only offers just 2GB more VRAM
