You should have no issues defragmenting a raid volume. Just do not defrag SSD's
The built in Windows defrag is VERY slow so maybe look at some 3rd party like Defraggler.
Yep, nothing changes because the LBA's on RAID1 should be identical on both drives. It will just be particularly slow because of the mechanical assymetry RAID1 creates.
