It currently houses three 2080 ti's, and I have another rig with 3 1080 ti's. I was thinking of getting a Cubix Xpand, putting two of the 1080 ti's in it and running that through the TR.

I don't think you can pair diffrent models of GPUs and get positive results.
I have tons of experience doing that, and you can. I have run all sorts of different generation cards together, most recently 2080 ti x2 and a 1080 ti. It works just fine from that aspect.

Then what are your concerns? The Threadripper has 60 lanes. I guess if you want to run 5 cards, you would have to sacrifice performance to x8 instead of x16 per card. I cant tell you how much of a performance draw that is.

Off the top of my head, I was curious if I had three cards in the Cubix, can I run two more cards from the TR itself?
