Can I backup RAID 5 then restore to RAID 0

I currently have a RAID 5 array that I currently have various programs and files stored. My Windows 7 is on a separate ssd. For various reasons, I'd like to replace the the RAID 5 with a RAID 0 or RAID 1 array. My question is can I simply backup the RAID 5, then restore to the new RAID 0 or 1 array?

Sure, back them up to another storage device or equal or greater size than the files, then copy them to the new array once it is created and functioning.

RAID 0 is less safe than 5 or 1, there is no fault tolerance -- one drive dies and the data is gone, no recovery. If the data is important back it up to another location also, RAID is not backup.
