Can I CrossfireX my old HD5850 with a HD5970 to run 3x1080p screens?

I have an aging PC rig which hasn't really been upgraded since c.2010, with a Sapphire Radeon HD5850. It's served me really well up till now and can happily run games like Assassin's Creed and GTAV; but recently I've been hoping to move to a 2 or 3 screen setup (1080p), which it is compatible for but can't actually seem to handle (I think the only reason is lack of VRAM).

I had a thought to get a second card to give my old rig one last boost, hoping to get another year or two out of it before throwing in the towel and building an entirely new rig, Say an HD5970 (the most modern card that would be Xfire compatible, according to the charts).
What I want to ask is - Would that work? and would it be enough to handle gaming on a 3x1080p Eyefinity display?

I would point out that if the issue is VRAM, then Crossfire isn't the solution as VRAM in a Crossfire set up does not stack. A 2GB HD5970 plus a 2GB HD5870 gives you exactly 2GB of VRAM.
