Total cost including taxes and shipping roughly $1,160.00. I realize the PSU is overkill but I'm limited on options right now due to the apparent supply issues on PC components. I'll add a 1TB HDD down the road. The 500GB SSD should hold me down for now. Does anything stick out to anybody as far as incompatibility issues, unwise choices, overpricing, missing components etc? I haven't built a computer in 10 years so I have to admit I'm a little out of the loop and I may be slightly intimidated and definitely rusty. I was thinking about spending another $100 on the Ryzen 7 3700X, should I? Thanks for reading.

It's all "Out of the box" compatible and near future upgradeable. For pure gaming 3600 is just as good as 3700x while for streaming and multitasking 3700x has an edge.
W10 you can get much cheaper at Ebay. They will most probably be OEM version but can still be reinstalled as many times as you want while still on same MB.

Psu isn't overkill; EVGA's BR series is cheap junk. Internal quality > wattage.
550-650w:

Get an aftermarket cooler for that cpu as well:
Arctic Freezer 34 eSports Duo
be quiet! Pure Rock 2 or Shadow Rock 3
Thermalright True Spirit 140 Direct, or ARO-M14G
 
For $30 more you can get a 5600xt, it's way stronger than a standard 1660, beats the 1669ti and is as good or better than a 2060 in some games.
