I have an iMac with only 2 usb c inputs. I already have a 1080p monitor and a 4k Wacom display tablet taking up both slots. I want to add another 1080p monitor to my work space. Will a usb hub with multiple display inputs allow me to hook up all the monitors? I am unsure if the Mac will accept them as separate monitors or if they will just mirror the displays.

MacOS will let you "extend" your displays or "mirror" them in the Display Settings under System Preferences. I can provide you some USB-C Hubs that allow for multiple display connections will allow you to do what you are looking for, BUT I can say from personal experience that some third party brands work for 1-2 weeks and then have issues.

One I recommend avoiding is "Hootoo" brand USB-C adapters. Try to stay within the Apple family as they seem to have the best reliability.... although 100% not worth the price.
