Can I put only two sticks of 32GB RAM (64 GB total) into an Asus ROG X570 Crosshair VIII Hero (Wi-Fi) motherboard w/ R9 5900x CPU?

Or do I need to fill all 4 RAM slots for optimal performance?

The RAM I am planning to use is Crucial Ballistix 64GB Kit (2 x 32GB) DDR4-3600 Desktop Gaming Memory(Black) - BL2K32G36C16U4B

The RAM is shown here: https://www.crucial.com/memory/ddr4/bl2k32g36c16u4b

Thanks.

Two sticks will work great with equal performance to 4 sticks if placed in the proper slots following your manual, you do not need to fill all 4 slots and would probably only need 128GB if you run a whole lot of VMs on VMWare Workstation.

The 2 stick set is guaranteed to be compatible. Happy 2021 -- nice build.
