Can I run 2 monitors at 1440p? If not, what should I upgrade?

Solution

as long as you game on a single monitor then a 290 is fine as long as you reduce settings

most likely medium/high settings ~60 fps on most things on a single 1440p screen

just having a second monitor doesnt cost anything as long as you dont use both at the same time for gaming

a gtx 1070 is the perfect card for mostly ultra 1440p gaming on a single screen

if you want to game on two 1440p screens at once then you are going to need a gtx 1080 ti

I want to push my current build a bit further. Its been ~3 years since I built it. I want to be able to run current releases on max settings while also having a second screen for work. Would upgrading to a gtx 1080 be overkill?

for 1440p a gtx 1070 is great

a gtx 1080 is for ultra no compromise settings 1440p

So if I wanted a 1440p max settings gaming monitor and a 1080p work monitor, a MSI GeForce GTX 1080 8GB Founders Edition would be enough? Would my PSU have a compatability issue? or my mobo?

yes, avoid the FE card though

you could have three 1440p screens if you wanted, as long as you only game on a single screen

you did not list your power supply

as long as the motherboard has a pcie slot and your case is big enough to fit the card, that is all that matters as far as that is concerned
