I am running a single rx 480 at 22mh/s, this rig is not geared towards mining and I’m doing it for fun. Would I be able to solo mine ethereum blocks for a higher payout? Or should I stick to pool mining from the difficulty being too high?
The overwhelming majority of people appear to mine to make money. If that is your objective then you should work out how much it will cost you versus the potential reward. Costs include: energy including any additional cooling needed; equipment purchase and replacement; fees and charges. Reward level depends on the difficulty of mining and presumably difficulty varies between solo and pooling activities. Be hard headed about this.
If the proposal to mine is not about making money why not just do it yourself. You could decide to pool later.

I did a calculator and found it would take am average of 1978 days to find one block at my hashrate, i feel like pooling might be my best option. I would like to at least collect pay once using either one of those methods before I stop mining, so which should I go for?
If you want to have revenue, but not worried about generating a profit, go for pooling if it is true that it increases your odds of getting some money.

5 years, 5 months. Assuming difficulty does not change, which it will. With your PC doing nothing else, except making noise and heat.
Doesn't sound like 'fun' to me.
