Can I still do a complete reinstall of my RC?

Yes, you're probably thinking 'why would he reinstall 4 days before the real deal?' but I've got performance issues now and I just want to start fresh. However, I'm concerned that I might have to activate my product key in order to later update to the real windows 7, and right now apparently Microsoft isn't allowing for new rc editions. So if I do a complete reinstall, will I be in trouble?

You should be good using the RC product key. I believe you can install it 3 times. I've done it 3 times using the original product key with no issues.
