Question Can I transfer files using this method easily?

This is what I'm thinking: If I disconnect my data drive (with no os on it) from computer 1, plug it into computer 2 using usb, copy the files over to a data drive on computer 2, and plug it back into computer 1. Would this work?

Provided that you have the appropriate drive interface type to USB adapter set-up, yes. It should work. It won't be fast, but it'll work.

If you have to do this often, you may want to invest in a drive dock to make things at least a bit simpler to manage.
