I just bought a 1080ti which requires 2 8 pin connectors, so I will have to use two VGA cables. I was wondering if I could plug the 6+2 end of the vga cable into the PSU instead of the 8 pin connector so I don't have ugly cables hanging out of my gpu.

That's the purpose of the 6+2 pin pcie cable, it can be used as a 6pin or 8pin for pcie. You'll need both to power the gpu, so 2x 6+2 or 2x 8pin is the same. Just do not try to use the 8pin EPS, it's same amount of pins but different configuration.

Once the 6+2 is inserted you won't even really notice it , will look clean.
