So i have 2x1tb drives that i just got
Would it be possible to set these up in RAID 0 and still have my 4 other drives unaffected?

Specs

GA H270-HD3
12GB DDR4 2400MHz RAM
550W PSU
Existing HDD's are

Solution
Yes.
the possible problem could be that if the sata is set to RAID, it needs different driver.

Your motherboard has all 6 ports on same chipset so that doesn't allow easy driver change in that either (older boards had it as 4+2 and setting the 2 port chip as RAID would have worked in your case) so..
change settings
create RAID volume that uses the two 1TB disks in raid0
don't do anything for other disks
it all works.

it might need driver changes which might easily lead to "easy" way of just reinstalling windows. Repair functions might or might not be able to repaid the changes in disk designations on boot loader.
