Additionally, XP + SSD is not really a good idea. XP has no idea about TRIM, so that won't happen automatically as it would with a newer OS.
i assume you are asking about using 32 bit xp with a 64 bit cpu? if so, then yes it will work fine.

if not, then you'll need to be a bit more specific such as listing the specs of the pc. i also have no lcue what you mean by "what would be my limit for adobe 7"
 
While this will work it may be hard to set up .

XP dates from before SATA hard drive connectors so you have to enable legacy or IDE mode for the SATA connectors for the OS to even notice the hard drive [ or slipstream the SATA driver from a floppy disk which is exceptionally painful and flakey]
But once you have it running you will notice performance is awful and you have minimal online security which should make the experience interesting
