Question Can my motherboard take a 1660Ti?

Currently looking at another upgrade path for my system and was wondering if a GTX 1660Ti will work with an ASUS Prime A320m-k. My full system specs are below;

GPU: GTX 1060 3gb
CPU: Ryzen 5 1600
RAM: 16gb HyperX Fury 2400MHz
PSU: Corsair CXM550W
Motherboard: ASUS Prime A320m-k
Storage: 2x1 TB Seagate

Yes, no problem with the board. You can use any gfx card you want with that board. But keep in mind, there's no OC'ing with that board.

Depends on which computer case and which GTX 1660 Ti.

Your case has 12.4" of room for a gfx card. And the card you linked to is only 8.1" long. Plenty of room. But that card isn't a GTX 1660 Ti.

I was going to get the gigabyte one but my Monitor doesn't support 144hz on HDMI and doesn't have a display port so it needs to have DVI. Would a DVI to display port adapter be ok?

That card is 232mm (9.1") long. Still good.

With your Ryzen 5 1600, yes. Should be fine with no bottleneck, and produce some big fps numbers. As to the PNY-branded cards, I've only had experience with a couple of them in the past, but had no issues.
