The memory list on the ASROCK webpage wasnt full, but can you guys help me if these two are compatible or not?

2666MHz is a frequency used when overclocking and is the only XMP setting listed as available. 2133MHz is the standard speed supported. You can manually set the TIMING PARAMETERS or leave them on [Auto].

DDR4-2666 CL15-17-17 @1.2V
DDR4-2400 CL14-16-16 @1.2V
DDR4-2133 CL12-14-14 @1.2V
•XMP Profile #1:
DDR4-2666 CL15-17-17 @1.2V

As far as being compatible, the CPU used has the memory controller. You wouldn't want to buy this memory for a CPU that has a locked multiplier. Other considerations are also dependent on the CPU that is chosen.
- Supports non-ECC, un-buffered memory
- Supports non-ECC RDIMM (Registered DIMM)
- Supports DDR4 ECC, un-buffered memory/RDIMM with Intel Xeon processors E5 series in the LGA 2011-3 Socket

The memory you listed is non-ECC, un-buffered memory for overclocking.

I don't want to overlock my RAM. The most important thing is that this RAM will be able to run with this motherboard, it is supported, right?

2133MHz is the standard speed supported. Your 2666MHz memory supports Plug N Play automatic overclocking. For a beginner I would use regular 2133MHz memory. There are other types of memory the board can use as listed above. Other considerations are also dependent on the CPU that is chosen, which you have not listed.
