Can we bypass game update Patches on ps4 and still be online?

I will be buying watch dogs 2 very soon but my interent connection is weak and WD2 patches are hefty I've heard.
So I wanna know if I'll be able to be online on Uplay without having to download those patches...

Doubtful. Dont own a console but if its anything like PC games, the versions need to be identical.

Yeah, you'll probably find that the patches have to be in line with PS4 online servers, specifically if the game is also online multiplayer, you will not be able to join online servers running the newer patches. Plus, patches are there to address known issues and problems with the game, so its in your best interest to make sure they're up to date to get the most from them.

How long will it take to update games like gta 5 and watch dogs 2 to update from the first patch to the latest? Any idea?

Thats dependant on your broadband speed and also how busy the patch servers are at that time. If you are worried because you have slow broadband...you could always take your PS4 to a place with fast broadband, and get the patches downloaded there, then take it back home.
