I live in England, budget is £600. The PC will be for just every day use mainly internet - I know its a bit overkill but I want good specs. What in particular would you suggest changing?

For generic usuage you dont need overkill. You will be paying for something which will lie unutilized and become obsolete after a while.

I was going overkill because I want to future proof it as much as possible and I might try some light gaming/video editing - do you think your intel build would be decent enough to do these? Is there much difference between the i3-8100 and the i5-8400?

It can handle light gaming. But Ryzen APU integrated graphics is better suited for that.
The difference comes when you use too many apps or more than light gaming. Ofcourse more cores help when your workload is more. So your selection should be based on your workload. But, what you said... "The PC will be for just every day use mainly internet" does not suggest any significant workload to need a 6 core.

Mid-range laptop? Gets you portability and you can still do keyboard/monitor/mouse at home.

I was under the impression Ryzen didnt have integrated graphics which is part of the reason I've gone to intel (as well as all past laptops being intel).

Eximo - I don't have very good luck with laptops, even though I go for decent specs and big brands they never last me long

Ryzen 2200g and 2400g are APUs with integrated Vega 11 graphics, which gives you performance along the lines of gtx1030. Unfortunately those are the only two APUs right now, but their integrated graphics are miles better than Intel.
