Can't change bios values

Well I got my previous problems sorted out and this site was essential to my troubleshooting thank you very much. But now I have another question, For some reason I can only change around 3 of my settings in the bios. When I go into oc tuner in the bios because I have an asrock p43-de3 I can change it to manual cpu quiet fan overclocking to manual and vdrop. Otherwise I can't change any of my overclocking so I have to overclock in windows 7 which is annoying cause I have to do it everytime I turn my computer on. I'm thinking along the lines that I might have to reflash my bios any input would be greatly appreciated.

Your BIOS has an entire page dedicated to tweaking and overclocking.
The problem is not the board, the problem is I don't believe you completely understand what you are doing.

i did that and all it says is set overclock to mode which i did and i still cannot change it
