The only motherboards I can find only supports up to 512 GB and not the full 1 TB for NVMe SSDs. Example :

Motherboard: SRock Z390 Phantom Gaming SLI/ac ATX w/ 802.11ac Wi-Fi, ARGB, USB 3.1, 2 PCIe x16, 4 PCIe x1, 6 SATA3, 2 M.2 SATA/PCIe

Storage: Ultra M.2_SSD (NGFF) Module Support List

Vender: Intel

Size: 512GB

Interface: PCIe3 x4

Length: 2280

Part No.: 660P-SSDPEKNW512G8 NVME

You're likely only consulting the QVL, which is far from an exhaustive list - it's simply what the manufacturer had on hand to test with.

There's really no limiting factor on any modern board that would allow a ~500GB class NVMe drive to work and not a 1TB or larger.

Don't worry about the QVL too much, a 1TB NVMe SSD will work just fine on that board.
