Question Can't undervolt Asrock 5700 XT Challenger without games crashing

I've tried undervolting the stock settings by just 5% and that still makes them crash. This card is insanely loud and I really need to lower the temps, so this is presenting a massive problem for me. Anyone know if it's possible for me to undervolt without the crashes or am I just SOL?
Even using the auto-undervolt in Wattman, which reduces the mV to 1150 from the stock of 1200 makes the GPU crash. I'll be playing a game and then I'll lose the video signal and have to restart the whole machine. Here are my specs just in case:
Asrock 5700 XT Challenger @ 2025 Mhz and 1200 mV
Asrock B450m HDV R 4 mobo
Ryzen 5 2600x
16gb G Skill Aegis Ram
EVGA BQ+ 750w PSU

Because I'm trying to keep the temps lower by using less power.

Lower clocks mean less power which means lower heat.

I lowered both the clocks and the voltage 5%.

This is 100+ MHz above stock boost clock for that card. Did you overclock it?
