Capture Card Recommendations?

I want to record my gameplay but I want clear quality, I've used an Elgato but always had fuzzy unclear recordings with my older consoles N64, PS2, Snes.
How do youtubers like JonTron and they get clear videos each time.

I heard they (Gamegrumps) have something that upscales the quality so it's clearer, but I don't know what it is.

Are there any capture cards that are noteworthy for this kind of thing, or any idea what I'd need to make videos clearer?

Also I recently sold the Elgato to assist with upgrading my PC.

Or watch some of the AVGN's videos, he records basically only old console games, and he's made a couple "this is how I do it and this is my setup" videos.

I seen a portion of his video showing how he does it. the setup seems complex but i think its due to ALL those consoles, since I have a few consoles I might be able to make it work. though the CD recording bit seems like it'd become costly I can't afford to spend on CD's.
