Card for 1440P BenQ (GW2765HT)

I'm getting a Dell XPS Tower (with 16GB and SSD) for use with an existing BenQ 1440P monitor (GW2765HT). I'm not a gamer, but would like to drive the monitor reasonably well. I'd appreciate advice on which of Dell's offered low-mid-range graphics cards would be best but not overkill.

NVIDIA GeForce...
GT 1030 2GB +$ 0
GTX 1050Ti 4GB +$100
GTX 1060 6GB +$250

AMD Radeon...
RX 560 2GB +$ 50
RX 570 4GB +$150
RX 580 8GB +$200

And, should I consider a new 1440P monitor, say one of Dell's 27" models, which come at a discount with a system?

Thanks! Is there much advantage to more graphics memory other than gaming? Better video viewing? Frees system RAM (which is important for me)? Etc?

If not, may as well go with a 2GB card, correct?
