How future proof would you say the Rx580 is?
If I have to upgrade cpu/mobo would I end up needing to replace the rx580 again?
I am open to anything in between the two cards as well. I'm just not sure what level of performance would be needed...ie 1050/1060/1070/vega56 etc etc

RX 580 is okay for a while for 1080p gaming. If you have plans to upgrade your CPU in the near future and want to game in 1400p, you can get the RTX 2070 if you like and if you have the cash. If you plan on 1080p for the foreseeable future, the best 1080p GPU is the RTX 2060. But i7 2700 will bottleneck that too.

Then why don't you grab one of the QUADRO GPUs instead, if you don't have plans to play GAMES ?

Basically, the price. Quadro P5000 is roughly $1600 were as the GPU equivalent GTX 1070 is half that.
This system is a work system first but I do play some games on it. I'm more concerned with the programs mentioned working well as opposed to a specific game.

To be honest with those apps i'd go for 2070 and then look at a Ryzen 2700X which will help dramatically with those apps if you have the money.
I was afraid of a comment like that. Obviously, this system has been around for a long time...maybe it is time to retire it and do a full upgrade.
