If i have a T-Mobile unlimited data smartphone plan, can i take the sim out and pop it into a mifi and still get that same 4g lte data? Would they be able to do anything about it if i did that?

Would using a different mobile hotspot/tethering app then whats on the phone get me unlimited data for what connects to it rather than 7gb?

Using a different program won't help your limit because the data travels though the phone no matter what you use.
Don't know about moving the SIM to another device, you can try it and see if it works You may get an invalid SIM error unless the device is designed for use with T-Mobile.
