If the case has no cable management, swapping PSUs takes about 10 minutes when you know what you are doing. In cases where all the wires are routed behind the motherboard, it can take well over half an hour to untie all the wires, untangle them, thread them out through cut-outs, pull the new cables through and tidy everything up.

All the PSU connectors are keyed, which should make it nearly impossible to connect them incorrectly without having to use substantial force.
 
If you are changing one PSU for another, you should be using cables from the new PSU as well. Any decent PSU will have labels on the cables that correspond to the same labels on the PSU itself. If there are no markings to direct you, I would consult the user manual of your new PSU just to be safe. Even still, it's pretty hard to mess it up since very few of the cables have the same number of connectors, so it's pretty much a "paint by numbers" kind of process. Plug the 24-pin cable into the 24-pin plug on the PSU. Do the same for the rest of them. It's not too difficult. Don't get too stressed over it.

If you really want to play it safe, take pictures of all the cables and where they are connected BEFORE you take anything apart, that way you can always revert back to the old way without hurting anything.
